Grilled Pizza Goodness

Warning - the dough needs to sit for 2 hours...so don't try to make this when you are starving. Unless you make the dough ahead :)

Combine in your primary mixing bowl and let proof for 10 minutes, or until frothy:
1 packet active dry yeast
1 cup warm water
1 pinch sugar

In a separate bowl, combine:
3 1/3 cups flour (whole wheat, preferred)
2 Tsp. salt
1 1/2 Tbsp. olive oil

Once the yeast has proofed, add the flour mixture and mix well until the dough starts to form a ball and pull away from the bowl. Remove to a floured surface and knead until smooth. Use that bowl from the flour - coat it with olive oil. Put the ball of dough in and cover with a wet towel. Let it rise for an hour, punch it down then return to the bowl and cover again for another hour. Split the ball in half and stretch to make two pizzas. I put mine on a cookie sheet.

Prep whatever you are going to put on your pizza - the next steps fly by, there's no time to do anything but assemble...this might mean you need to pre-cook toppings.

To grill...use a paper towel to brush your grill with oil. Heat it to high, then lower to medium.
Brush one side of the dough with garlic oil (oil and minced garlic); put that side down on the grill. Brush the top with the oil and close the lid (~5 minutes) until the dough has some nice grill marks and looks browned. Flip it!

Quickly put down your sauce, toppings and cheese (or whatever) and close the lid so the cheese melts.

And, voila! I will never bake a pizza again.
